Healthy Broccoli Soup

If the cold, long winter has you feeling blue already, then I bet that a warm cup of soup is all that it will take to keep you warm both in heart and mind. And in this twin year of 2020, if there is anything that we have learnt, it has to be the importance of maintaining a good and healthy lifestyle. Keeping all of this in mind here is a quick recipe for broccoli soup for you all.

“This broccoli soup is creamy, comforting and smooth.”

Ingredients:

· One small onion chopped

· 3 to 4 cloves of garlic chopped

· 1–1.5 broccoli (300 grams)

· 1 teaspoon butter

· 1 teaspoon olive oil

· ¼ teaspoon refined flour or whole wheat flour

· Salt as required

· Crushed black pepper as required

The Process

· First, break the broccoli into small florets or you could also chop them.

· Heat enough water in a medium-size pot and let it boil.

· Add the broccoli florets and wait for 2 to 3 minutes.

· Switch off the flame and drain the florets. Reserve a few broccoli florets for garnishing.

· Heat some olive oil in a pan and sauté onions and garlic till they are soft.

· Grind the blanched broccoli florets along with sautéed onions and garlic into a smooth paste.

· Now heat some butter in the pot and add refined flour or wholewheat flour, and sauté it on a low flame.

· Now, add the ground mixture of broccoli florets and onion and garlic to the pot and mix.

· Add vegetable stock of your choice to this mixture and adjust the consistency of the soup.

· Season with salt and freshly crushed black pepper.

· Let the soup come to a boil. Don’t forget to give occasional stirs.

· Serve this fresh broccoli soup with some toasted buttered bread of your choice.

There is nothing quite like a ball of soup during winters. Soups are by nature very eccentric. Happy healthy winter everybody!

Suitable for: This broccoli soup is a completely low-calorie indulgence had a great source of fibre, essential vitamins and minerals. This makes it a great winter dish for everybody right from vegans, children of all age groups, to even those who have stepped on a weight loss journey.

Avoid When: If you have Salicylate sensitivity, then it’s best recommended for you to avoid consuming broccoli. Otherwise this soup goes down well as it doesn’t contain any milk or nuts.
